Potatoes take time to cook almost no matter what you do, but Turkish potato cake is very hands-off. While the cake bakes for 45 minutes, the potato needs no pre-cooking and creates no extra dishes. That makes it ideal for a slow, summer evening, when sunset is later and you want something relatively easy.

Ingredients
- 2-3 potatoes
- 125g thick yoghurt
- 125ml olive oil
- 200g feta
- 185g flour
- 15g baking powder (1 sachet)
- 3 eggs
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp chili powder

Method
- Cut potatoes into small cubes and place them in a bowl of cold water. Leave for 10 minutes in the cold water - don't boil them, just let them soak.
- Meanwhile, mix the eggs, yoghurt, and oil in a mixing bowl until uniform and emulsifying.
- Crush feta with your hands. Don't mash it, but crush into rough crumbles. The Turkish say that "your hands will give taste to the food!"
- Add the flour, baking powder, salt, black pepper, and chili powder to the liquid ingredients and mix well. Then incorporate the feta. Once mixed well, add in the potato and mix until uniform.
- Pour the mix in a baking pan and bake at 180 degrees for 45-50 minutes until golden brown and cooked inside. You can test the inside consistency with a knife - keep in mind that it won't return totally clean because of the melted feta. This is the perfect time to make any sides.
- Once cooked and golden, remove from oven and baking pan and let cool for at least 10-15 minutes before cutting open and serving. Again, a good time to prepare any last-minute fresh sides.
