Stuffed peppers are super flexible and fit perfectly in a no waste meal plan. Fill them with whatever ingredients are about to expire or that you bought on offer.

Leftovers

Stuffed peppers heat up great the next day! Simple pop in the microwave or oven. In the microwave, be careful to heat the middle well, as the pepper will heat before the centre of the filling does.

Base Ingredients

- Brown lentils, kidney beans, red onion, rice, and crushed tomato: Cook all on hob, stuff with a bed of leftover rice +€3.65
- Mince, onion, risotto rice, and crushed tomato: Sauté mince, add onion, crushed tomato, mix in rice and stuff +€4.87 vegan mince +€9.45 beef mince
- Canned tuna in bechamel, peppers cooked in tomato sauce: Fry onion and canned tuna, mix with bechamel, stuff peppers and bake in paprika-rich tomato sauce +€4.95

Method

  1. Heat oven to 190 degrees.
  2. Halve de-seeded peppers, and roast in a baking tray skin-side up for 15-20 mins. Sprinkle salt on them before roasting to bring out the moisture.
  3. During this time, prepare your filling on the hob. The filling should not be too liquidy. Any interior sauce that you make should be quite thick and dense.
  4. Once the peppers have softened and are beginning to brown, turn them around and stuff as much of the filling as you can inside. If you are cooking them dry, simply bake again for 10-15 minutes more. If you are cooking them in sauce, add the sauce to the tray enough for it to cover halfway up the pepper.
  5. If you are adding grated cheese, add on top and bake for another 5 minutes. Optionally, put the grill on for 2-3 minutes to brown the cheese nicely. Serve.
