Ingredients

  • 500g thin spaghetti/linguine/capellini
  • 150g smoked salmon
  • 250ml cream 7%
  • 2 cloves garlic
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 tsp nutmeg
  • Parsley/chive

Pasta rule of thumb:
Fish/light cream sauce? Thin pasta.
Meat/tomato sauce? Thick pasta!

Method

  1. Prepare a large saucepan of water and bring to a boil.
  2. Meanwhile, dice garlic and cut smoked salmon into flakes.
  3. Once the water is boiling, salt well, then add your pasta and cook until al dente. Follow packet instructions.
  4. While the pasta is cooking, in a small saucepan add butter and garlic and sauté for 1 minute. Once the butter is melted and garlic fragrant, add flour and whisk well for 1 minute to ensure that the flour is cooked. The consistency of your roux at this point should be uniform and malleable, not too liquid nor solid.
  5. Slowly whisk in your cream as you continue to whisk. Add in nutmeg and black pepper. Whisk slowly for 2 minutes, then add your salmon flakes.
  6. Once the pasta is cooked, drain away the water - reserving 80-120ml of the water and add it to the sauce.
  7. Once your sauce is a good consistency - thick enough to coat the pasta, not too thick to form clumps - pour a good amount over the spaghetti in a bowl and serve with parsley/chive on top.
  8. Enjoy!
