How to use in a meal plan

A quiche is a great way to use up an extra ingredients at the end of the week. You can put a lot of things in a quiche. While it takes a while to cook, all that time is hands off - the actual preparation is very simple. Given that it is easy to make a large quiche, it is a great dish to make when you are short on emergency meals. Freeze extra portions and avoid needing a last-minute, expensive takeaway!

Base Ingredients

  • 230g shortcrust pastry
  • 30g butter
  • 20cl cream
  • 20cl milk
  • 3 eggs
  • 1 tsp nutmeg

Quiches are easy to customise. Here are some ideas:

- Courgette: Sauté 1 sliced courgette in butter until browning +€0.98
- Leek, cheese & onion: Sauté diced onion until soft. Add 1 sliced leek. After 5 mins, cover with a lid and simmer for 10 mins. Fry off water, finish with 1 tbsp butter. Add to pastry, top with cheese +€1.28
- Bacon lardons: Quiche lorraine! Simply fry 200g lardons +€2.29
- Salmon & broccoli: Steam/boil 200g broccoli for 3-5 minutes and pan-fry 250g flaked salmon until just pink +€5.78

Method

  1. Butter and flour a deep quiche tin with butter and flour. Roll out shortcrust pastry to cover the bottom and sides, including a lip over the top of the pan to allow space for shrinkage. Poke holes in the bottom with a fork. Blind bake for 12-15 minutes at 180 degrees until turning just golden. When ready, set it aside.
  2. Meanwhile, prepare your fillings. Either cook them and set them aside, or while they cook/simmer you can whisk eggs and cream together. Season with nutmeg, salt, pepper.
  3. With the pastry pre-baked, spoon your fillings onto the base. Pour over the eggs and cream mixture, then bake for 35-40 minutes or until golden-brown and just set on top.
  4. Leave to sit for at least 5 minutes before cutting. During this time, you can prepare any fresh sides such as a simple salad. When ready, cut and serve.
  5. Enjoy!
