What to serve it with?
Halloumi wraps go perfect on their own. Serve with a mix of sauces, from spicy to smoky and savoury. Andalouse, samurai, pita, hot sauce, yoghurt and mint - all good choices!
It's best to serve wraps with the fillings and sauces on the table, that way you can keep adding a little extra as you go.

Halloumi wraps are great in a meal plan because they are so fast to make. Combine halloumi's long shelf life with a salad of pretty common vegetables, and you have yourself a great back-up dish for the middle of the week.
Since it uses mostly light, healthy ingredients, halloumi wraps are good on warmer days or to place in between heavier meals.
Leftovers

Halloumi wraps are perfect the next day. Don't pre-make them, instead package your wrap, salad and sauces, and halloumi separately. Warm wraps on the hob or in the microwave, reheat the halloumi in the microwave, and simply add salad and sauces, then roll and enjoy.

Ingredients
- 4 large wraps
- 200g halloumi
- 50g salad leaves
- 1 salad tomato
- 1 carrot
- 1/4 cucumber
- 1/4 red onion
- 50g sweetcorn
- 50g pomegranate seeds (frozen)
- 50g houmous
- 1 tbsp chosen sauce
- 1 tsp lemon juice
- Fresh herbs
- Olive oil

On most halloumi products, supermarkets like Colruyt and Delhaize often do promotions, like 33% off. That makes it closer to a normal price. Plus, because halloumi has a very long shelf life of close to a year, it's totally possible to wait for an offer and buy several.

Method
- Cut your halloumi about 1cm thick, ideally into 12 slices (three for each wrap).
- Prepare salad by dicing all vegetables very thinly. Defrost pomegranate seeds in microwave.
- Rinse salad leaves, chopping thinly if using big leaves like an iceberg lettuce, otherwise leave whole.
- Fry halloumi until nicely browned on both sides, then set aside. Wipe the pan clean with some kitchen towel, and heat your wraps on the hob until just browned - not too long, or they get brittle and hard.
- Spread houmous on bottom, then along a line 1/3 way in the wrap add salad, halloumi, leaves on the side, and sauce and herbs on top.
- Fold the edges of the wrap and roll in the front edge to tuck the ingredients in, rolling until nicely rolled.
- Serve!
