Buckwheat pancakes from Brittany, galettes bretonnes, are filling, flexible, and super easy to make. Because you can fill galettes bretonnes with so many things, it is the perfect weeknight dish for any meal plan.

Where to buy buckwheat flour in Belgium?
Buckwheat flour can be expensive in Belgium, depending on where you look.
But by far, at the time of writing, the best price for buckwheat flour (farine de sarrasin/boekweitmeel) can be found at Intermarché. For around €3 (exact price to be confirmed, their website doesn't list products in Belgium, only France), you get a nice 1kg bag from Brittany. That's about half the price of the other retailers!
Not near an Intermarché, or in Flanders, where there aren't any at all? There are other, albeit more expensive, options in Belgium. You could try local delicatessen stores or get lucky at other discounters like ALDI or LIDL, though here is what I could find for sure online:

Method
- Galettes bretonnes, like pancakes, require constant attention to ensure that they don't burn. So if you're cooking solo, start by preparing your chosen fillings. Then once they are cooked, set aside and make your galette batter. If you're cooking as a duo, it makes sense to have one person do fillings and one do the galettes.
- Add flour and salt to a mixing bowl, then slowly whisk in the water until a smooth consistency. It should not offer much resistance to the whisk, but you don't want it as thin as water. If your mixture is too thin, the galettes will crack and break apart. If that happens, simply add more flour.
- Now put the pan on medium heat and add a small amount of butter - enough that when melted it thinly covers the surface.
- Ladle over the galette batter as you turn the pan to achieve full, uniform coverage. With your spatula, turn in the edges of the galette slightly to avoid thin, crispy edges that burn faster.
- Cook for around 2 minutes or until golden brown, taking care not to burn, then flip and cook for 1 minute. Repeat with the rest of the galette batter.
- Plate up your galettes and put your fillings in the centre. Fold or roll to serve.
