What to serve it with?

Fried rice is a super satisfying dish on its own. It goes excellently with gyoza, spring rolls, a light miso soup, or a cucumber and carrot salad (both peeled into strips and tossed in 1 tsp rice wine vinegar).

Good home economics is using ingredients smartly - and that saves money and cuts food waste. A meal plan is a great way to do this.

Fried rice is a great quick meal when you don't feel like spending time in the kitchen. The most important thing is that you need leftover short-grain rice. We plan a fried rice when we have a night out or know there will be a day when we don't feel like cooking. In short, you can plan a rice dish to make extra rice.

Two cups of dried rice - about 300g - will make four portions of a dish and should leave enough for two portions of fried rice. Cooked rice lives for about 4-5 days in the fridge in an air-tight container and can only be reheated once.

Leftovers

Spoonfeed meal plans save you money by using the economy of scale. Making dinner also your leftover lunch avoids spending money and extra time cooking!

Fried rice is perfect to use up leftovers, rather than create leftovers. Because you should only reheat rice once, it's best to finish all the fried rice in one sitting. Alternatively, you can always eat it cold the next day (but hot is best).

  • 250g leftover cooked rice
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sesame seed oil
  • 1/2 tbsp ground ginger
  • 1/2 tbsp ground garlic
  • Vegetable oil/butter

- Spring onion: Sauté the white, add green at end +€0.35

- Mushroom: Sauté until dried out, set aside, add at end +€0.80
- Eggs: Scramble 3 eggs +€0.99

- Kimchi: Canned, serve on side and top as desired +€1.30
- Prawn: Cook until pink, set aside, adding to sautéed rice +€7.30

Method

  1. Prepare your chosen vegetables/proteins in a neutral oil. For a fried rice, you want high heat and short time on the pan. The ingredients should still be fresh and retain a crunch. For eggs, it's best to beat and scramble them, setting aside.
  2. Once your ingredients start browning nicely, chuck in the rice and keep everything moving for 2-3 minutes. Optionally, make a well in the centre, add 1 tbsp of butter, and sprinkle the garlic and ginger in it. Incorporate with the rice.
  3. Add your light soy sauce for flavour and dark soy sauce until desired colour, then finally sesame seed oil. Keep moving for 1-2 minutes until the rice is piping hot. At this point, reintroduce any reserved ingredients or add in raw ingredients like spring onion greens or fresh coriander.
