Carrot soup is ideal for a cold week or between heavier meals. It's simple to make - one pan only - and it doesn't need any intense attention or constant stirring.

Carrot soup is easy to make in big quantities. It keeps for 3-5 days in the fridge and it's also easy to heat up in a saucepan or the microwave.

Ingredients

  • 1kg carrots (5-6 medium-sized)
  • 1 white onion
  • 1 stock cube for ~500ml broth
  • 200ml milk/cream
  • 2 tbsp butter
  • 1 bay leaf
  • 1 tsp cumin
  • 1 tsp nutmeg/cinnamon
  • Fresh coriander/parsley to top

Method

  1. Dice white onion and then peel and roughly cut carrot into demi-rondelles.
  2. Sauté in a pot onion in melted butter until softening for 2-3 minutes. Add carrots and keep moving for 1 minute, then add cumin and nutmeg/cinnamon.
  3. Mix well for 1 minute, then cover with broth and throw in the bay leaf. Bring to a boil, then cover with the lid and simmer for around 15 minutes until the carrot is smooth. Stir occasionally.
  4. Once the carrots are tender, blend the mix until smooth and lump free. Return to a low heat and add milk/cream until a velvety consistency. Don't let it boil or the milk/cream may split.
  5. This is a great time to slice or heat up crusty bread.
  6. Serve hot, top with fresh herbs, and enjoy!
